Chapter 60 Detection of Artificially Ripen Mango Using Image Processing Md Mahbubur Rahman, S. M. Taohidul Islam, Md. Alif Biswas, and Chinmay Bepery 1 Introduction The tropical and subtropical countries in the world grow mango widely. Mango is an important fruit of Bangladesh and called the king of fruit. Nowadays, traders use artificial methods to ripen the mangoes. One of them is adding calcium carbide. CaC 2 is banned in multiple countries because of its dangerous health effects. But some tradesmen illegally use this chemical. Calcium carbide carries arsenic and phosphorous which is a carcinogenic agent. It causes many health problems in the human body. Packs of CaC 2 powder are stored in the crate of mangoes. The contact with moisture produces acetylene gas in the box which works as an artificial ripening agent. Artificial ripening is performed to obtain faster and more uniform ripening. Calcium carbide is an intensively dangerous chemical that may cause many deadly diseases. M. M. Rahman · C.
