Methods according to EU quality standards for raw milk produced in private farms must meet strict quality standards as the microbiological and hygiene-related rules on collecting and receiving milk in these farms. Physical-chemical and microbiological testing of raw milk, it highlights the quality of the fat content, protein, lactose, and how they have complied with the conditions of hygiene during and after milking, by setting the total number of germs as and udder health by establishing the existing level of somatic cells in milk harvesting. Keywords: farms, quality indicators, milk INTRODUCTION Current concepts of food safety for consumers impose major restrictions to ensure a perfect hygienic quality of products associated with maintaining unaltered the nutritional value as possible, or at least consistent with the range requested by the buyer. Milk consumption by biological value, is an important food for human nutrition and health, and requires knowledge and technologies for primary processing of its private farms, the effects of heat treatment and manufacturing and defects during processing (Macovei Viorica Maria, G.M. Costin, 2006). So far the quality is an important link in the economic chain of agricultural and food markets, relations between agencies involved in the production, sale and consumption of milk products. Quantitative and qualitative satisfaction of drinking milk and dairy products is influenced by some factors such as quantity, quality and value (Răducu Camelia Maria, Vioara Mirean, Bianca Ghirila, 2007). MATERIALS AND METHODS Our research has aimed on the quality of raw milk from 5 farms and processing in SC "Bonas" SRL Dezmir, Cluj County. The used working method consisted of physical-chemical and bacteriological analyses of raw milk, which were conducted in the laboratory of the Milk Quality Control Foundation- Floresti. The period under review was September-December 2010 and January- February 2011, being a total of 5 samples monthly taken. RESULTS AND DISCUSSION The raw milk coming from five private farms is received by SC "Bonas" SRL to process its dairy products valued by the population, and in Table 1 and 2 are shown the averages for physical-chemical characteristics of raw milk (Cora O., Camelia Răducu, 2011).
