COOKING AND THE SALONS: DIDEROT, STEWS, AND THE RULE OF BEAUTY Starting from Denis Diderot’s Salons, the aim of this article is to show how cooking constitutes a veritable laboratory that allows us to redefine a knowledge that, by re-establishing the continuity between craft and intellectual knowledge, combines reason and pleasure, rule and case. First, I will show how culinary metaphors call into question the value assumptions of the distinction between mechanical arts and beaux-arts. Cooking then allows us to observe how the ‘rhetoric of the recipe’ outlines an operative knowledge that makes knowing coincide with doing. Lastly, with reference to the ragoût and the philosophical-culinary debates that developed around the Encyclopédie, I will show how through the kitchen a whole critique of beauty is delineated that stems from the instantaneous and tasteful consideration of the reciprocal relationship between the parts of an artwork. *** 1. Mourir en philosophe ou en bouffeur? La philosophie a souvent reconnu dans la mort des philosophes, dans l’antiquité mais encore à l’époque moderne, un événement capable d’illustrer de façon iconique toute leur enquête et leur recherche.
