E-mail: rbk_fm@hotmail.com RESUMEN Se analizó un total de 126 muestras en leche cruda entera de tres municipios de la región de origen (Cotija, Tocumbo y Quitupan). La detección se realizó mediante el sistema microbiológico de difusión en agar utilizando Bacillus subtillis ATCC 6633, con una concentración de esporas de 10 6 UFC/mL como microorganismo de referencia. De las 126 muestras analizadas en leche en la primera etapa 77 muestras resultaron positivas representando el (61.11%) mientras que las restantes 49 (38.88%) fueron negativa. El estudio efectuado revela la presencia de residuos de antimicrobianos en la leche cruda con que se elabora el queso Cotija, lo cual pone de manifiesto que no se respetan los tiempos de eliminación establecidos por el laboratorio fabricante. Palabras clave: residuos, antimicrobianos, leche. ABSTRACT We analized total of 126 raw whole milk samples from three municipalities in the región of origin (Cotija and Quitupan,Tocumbo). The detection system was perfomed using the agar diffusion microbiological Bacillus subtillis ATCC 6633 using with a spore concentration of 106 CFU/mL as the reference organism. Of the 126 milk samples analized in the first stage 77 samples were positive representing (61.11%) while the remaining 49 (38.88%) were negative. The study reveals the presence of antimicrobial residues in raw milk that is produced with Cotija cheese,which shows that not respected clearance established by manufacturing laboratory.
