The conclusion of this analysis, the test results Total Plate Count results obtained is the number of bacteria is less than 25 or cup without colonies, then counted the number of colonies <25 x 10 colonies / gram. the test results WAC (Water Adsorbtion Capacity) shredded trevally fish amounted obtained a value of 76%, test results trevally fish meat cooking loss amounting to 26.8%.
