研究論文 農 業 機 械 学 会 誌59(4):21～28,1997 貯蔵農産物 の二次代謝 としての色発現* 元 永佳 孝*1・亀 岡孝 治*1・橋本 篤*1 要 旨 トマ トの追 熟 に お け る表 面 色 変 化 を色 素 生 成 に よ る色 発 現 と捉 え,表 面 色 変 化 か ら色 発 現 メ カニ ズ ム と色 素 生 成 を 半 定 量 的 に検 討 し た。 トマ ト表 面 の 色 相 変 化 を計 測 し,解 析 す る こ とで,色 発 現 の 起 点 と な る発 色 点 が トマ ト内 隔壁 上 部 に存 在 す る事 が確 認 され た。 次 に,ト マ ト表 面 色 の変 化 に携 わ る主 な色 素であるクロロフィル,リ コピンを,カロチンを基準にこれ らの含有割合の変化を解析 した。この結果, 色 素 抽 出実 験 で 得 られ る含 有 量 変 化 と同 様 の 変 化 傾 向 を 示 した 。 この事 か ら,速 度 過 程 の モ デル 化 が 困 難 と され て い る複 雑 な 二 次 代 謝 の一 つ で あ る色 素 生 成 の一 指 標 と して,表 面 色 が 有 用 で あ る事 が 実 験 的 に示唆された。 [キーワード]トマト,農産物,表面色,追熟,色彩計測,色素生成,二次代謝 Color Development of Tomato during Post-Ripening* Yoshitaka MOTONAGA*1, Takaharu KAMEOKA*1, Atsushi HASHIMOTO*1 Abstract Considering the surface color change in ripening of tomatoes the color appearance by the production of pigments, the purpose of this study is to examine the color appearance mecha- nism by measuring the surface color change, to find the relationship between the color devel- opment and the production of pigments. As the results, it was found the surface color chan- ged from the special points upon the radial wall of the pericarp. Next, the changing rate of the chlorophyll and the lycopene were calculated by assuming that the carotene content was constant. The calculated values showed the similar tendency to the extracted values of the pigments. This result is suggested that the hue was suitable for the analysis of the produc- tion of pigments.
